KUBBEH MADE WITH RICE FOR PASSOVER (FOR THOSE WHO EAT "KITNIYOT" - LEGUMES)

Sarah Sasson from Moshav Sedeh Terumot sends this traditional Iraqi recipe for rice dumplings filled with meat, with two options for soup to cook them in. Along with the recipe come her warm wishes for a happy holiday.

Ingredients for the dough

2 lbs. rice
1 lb. ground beef
1 lb. ground brisket
Salt

Dough

Wash rice and soak for two hours in water. Drain and grind rice in a meat grinder. Add the two kinds of meat and salt and knead to form dough.

Ingredients for the filling


6 lbs. ground beef
5 cups (40 oz.) margarine
Salt
Paprika
1 hot pepper, ground
5 onions, chopped
1 bunch parsley, chopped

Filling

Cook meat in a frying pan until liquids evaporate. Add margarine and salt and continue stir-frying. When meat begins to brown, add onions and continue stir-frying for 10 minutes. Remove from heat and add seasoning and parsley. Freeze mixture until slightly thickened.

Preparing the dumplings

Prepare balls of dough and smaller balls from the (frozen) filling. Poke a hole in the dough, insert filling and close. The kubbeh can be frozen on a tray (be sure the dumplings do not stick to each other) for later cooking. Recipe is sufficient for 60 dumplings.

Soup #1: (Red soup)

Ingredients

Beets
2 tbsp. tomato paste
Salt
Pinch of citric acid
Optional: Okra, white beets, turnips

Cook beets in water until soft. Add tomato paste, salt and citric acid and vegetables (if used). Simmer for 1 hr., add the kubbah and cook 20 min.

Soup #2: (Chicken soup)

To boiling chicken soup stock add salt. Optional: rice, lentils or seasonal vegetables. Simmer for 1 hr., add kubbeh and cook 20 min.

Mandelbroit

Ingredients

6 eggs
1 tsp. vanilla extract
2 cups sugar
Salt
1 cup (8 oz.) margarine
Chopped nuts, chocolate chips (optional)
2 ¾ cup matzo meal
Sugar + cinnamon for decoration
¾ cup potato flour

Mix eggs with sugar and margarine. Add potato flour, matzo meal, salt and vanilla. Add nuts and chocolate chips, if used. Moisten hands and form 4 loaves, according to size of pan. Sprinkle with sugar + cinnamon. Bake 30 min. at medium heat. Remove from oven, slice loaves and return to oven until slices are crisped (about 6 min.). Cool and store in an airtight container.
